Chicken tacos with guacamole, rice & sour cream.
Chicken tacos:
Stuff you need:
- Boneless chicken breasts, about 1 per person
- Jar of salsa, I usually use medium
- Taco seasoning, either a packet or your own mix
- Onion (optional)
- Bell pepper (optional)
- Crock pot
- Tortillas - flour or corn, your choice
Stuff you do:
- Put chicken breasts in crock pot & sprinkle with taco seasoning (I’ve started with frozen breasts and everything cooks in time)
- If you’re including onion and/or pepper, chop into chunks & add to crock pot
- Cover with salsa
- Cook all day
- Shred chicken
- Eat
Guacamole:
Stuff you need:
- 2 avocados
- 1/2 a red onion, chopped finely
- 1 garlic clove, minced
- lime juice
- Salt, pepper, cayenne
- Cilantro
Stuff you do:
- Chop avocados
- Put in bowl with onion & garlic
- Sprinkle in lime juice & spices
- Mix until combined
- Season as needed
Serve in bowls and go crazy. The tac-rritos were insanely yummy, and rival our favorite Mexican place.

After making the gayest cake ever, the gayest pancakes ever might be a nice treat.

Stuff you need:
- Sausage of some sort (We used this really great chipotle cherry chicken from Whole Foods)
- Tomato sauce (We used roasted veggie from a jar, again from Whole Foods, but any kind will do)
- Box of small sized pasta (aka not spaghetti/linguine. Penne or rigatoni are good choices)
- Sundried tomatoes
- Onion
- Garlic
- Mozzarella cheese
Stuff you do:
- Grill/somehow cook sausage
- Cook pasta
- Heat sauce
- Preheat oven to 350°
- Sautee onions and garlic & add to sauce
- Chop sundried tomatoes & add to sauce
- When sausage is done, cut into pieces & add to sauce
- When pasta is done add to sauce
- Put half into a oven proof dish, add some mozzarella cheese
- Top with the rest of the pasta and more mozzarella cheese
- Devour!
It’s stupidly simple and you can make endless variations on the theme - the chipotle sausage was great because it gave it a nice spiciness.
