Dinner Tonight:
I was craving some crunchy lettuce, but wasn’t in the mood for a salad.
What to make?
Simple - lettuce cups a la P.F. Chang’s (although I’ve never eaten there, it’s a simple enough concept).
I started up some rice, then sauteed some garlic and ginger in a bit of sesame oil. Once it was fragrant I added some ground turkey. When the turkey was just about cooked through I added some terriyaki sauce and a couple squeezes of sriracha. While this continued to cook I stripped a head of ice-burg lettuce, being careful to keep the leaves intact. Once the rice was done I separated the rice & turkey into bowls, grabbed my lettuce leaves and dug in - a bit of rice, a bit of turkey and a few squeezes of sriracha.
It’s a great contrast of flavors and textures and a nice change of pace since we’ve been grilling so often.
