&lt;p&gt;Stuff you need:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Boneless chicken breasts, about 1 per person&lt;/li&gt;
&lt;li&gt;Jar of salsa, I usually use medium&lt;/li&gt;
&lt;li&gt;Taco seasoning, either a packet or your own mix&lt;/li&gt;
&lt;li&gt;Onion (optional)&lt;/li&gt;
&lt;li&gt;Bell pepper (optional)&lt;/li&gt;
&lt;li&gt;Crock pot&lt;/li&gt;
&lt;li&gt;Tortillas - flour or corn, your choice&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Stuff you do:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Put chicken breasts in crock pot &amp; sprinkle with taco seasoning (I’ve started with frozen breasts and everything cooks in time)&lt;/li&gt;
&lt;li&gt;If you’re including onion and/or pepper, chop into chunks &amp; add to crock pot&lt;/li&gt;
&lt;li&gt;Cover with salsa&lt;/li&gt;
&lt;li&gt;Cook all day&lt;/li&gt;
&lt;li&gt;Shred chicken&lt;/li&gt;
&lt;li&gt;Eat&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;strong&gt;Guacamole:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;Stuff you need:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;2 avocados&lt;/li&gt;
&lt;li&gt;1/2 a red onion, chopped finely&lt;/li&gt;
&lt;li&gt;1 garlic clove, minced&lt;/li&gt;
&lt;li&gt;lime juice&lt;/li&gt;
&lt;li&gt;Salt, pepper, cayenne&lt;/li&gt;
&lt;li&gt;Cilantro&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Stuff you do:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Chop avocados&lt;/li&gt;

&lt;ul&gt;&lt;li&gt;Sausage of some sort (We used this really great chipotle cherry chicken from Whole Foods)&lt;/li&gt;
&lt;li&gt;Tomato sauce (We used roasted veggie from a jar, again from Whole Foods, but any kind will do)&lt;/li&gt;
&lt;li&gt;Box of small sized pasta (aka not spaghetti/linguine.  Penne or rigatoni are good choices)&lt;/li&gt;
&lt;li&gt;Sundried tomatoes&lt;/li&gt;
&lt;li&gt;Onion&lt;/li&gt;
&lt;li&gt;Garlic&lt;/li&gt;
&lt;li&gt;Mozzarella cheese&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Stuff you do:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Grill/somehow cook sausage&lt;/li&gt;
&lt;li&gt;Cook pasta&lt;/li&gt;
&lt;li&gt;Heat sauce&lt;/li&gt;
&lt;li&gt;Preheat oven to 350°&lt;/li&gt;
&lt;li&gt;Sautee onions and garlic &amp; add to sauce&lt;/li&gt;
&lt;li&gt;Chop sundried tomatoes &amp; add to sauce&lt;/li&gt;
&lt;li&gt;When sausage is done, cut into pieces &amp; add to sauce&lt;/li&gt;
&lt;li&gt;When pasta is done add to sauce&lt;/li&gt;
&lt;li&gt;Put half into a oven proof dish, add some mozzarella cheese&lt;/li&gt;
&lt;li&gt;Top with the rest of the pasta and more mozzarella cheese&lt;/li&gt;
&lt;li&gt;Devour!&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;It’s stupidly simple and you can make endless variations on the theme - the chipotle sausage was great because it gave it a nice spiciness.&lt;/p&gt;
